Veggie Lasagna

I want to share some of my veggie recipes. These that I share are the one's my family loves and full of flavor. I don't know how to write recipes so let me know if anything needs to be clarified.
Veggie Lasagna
Cook about 9 lasagna noodles according to package directions.
Chop one zucchini and some mushrooms (sorry I don't measure, just use your own judgement)
I use 2 tbls of olive oil and use 3 cloves of minced garlic and saute in a pan. I add the zucchini and mushrooms after just a minute. Cook until all veggies are soft.
In a small bowl combine 1 sm carton of ricotta cheese, 2 tbls of parsley, and 1 egg.
Spread some of the marinara sauce on bottom of pan. Lay 3 noodles across bottom of pan. Spread some of the ricotta mix on each noodle and top with some of the veggies and then cheese of your choice. (I use mozzarella) Lay noodles on top and repeat process until you have used all ingredients. Then top with remaining marinara sauce and cheese.
Put in oven of 375 degrees covered with foil for about 15 minutes. Take foil off and cook for 10 more minutes.
This is so good and a good way to get your kids to eat veggies.
